Given that I’m from the Pacific Northwest, I was thrilled when a friend pointed me to Whisk(e)y Your Way this morning.  Based in Portland, Oregan, Whisk(e)y Your Way allows you to create your own whisky, right down to the level of charring and type of oak.  If you can find the time to get to the House Spirits Distillery (where the program is based), you can even participate in preparing the wash, distilling, and barreling your spirit.  Lastly, in recognizing the importance of aging, the program allows you frequent visits to your cask to sample and check on its development for up to 4 years.  After selecting a label and bottling, you end up with roughly 100 bottles at $50 per bottle.  It’s a pretty good deal if you ask me.  For those interested in learning more about whisky, this would be a great option.  If you so choose, you can visit for a week-long period, and do the following:

  • Day 1: Afternoon flight arrival, evening distillery tour and tasting.
  • Day 2: Morning wash production. This takes 4-6 hours from mash-in to transporting the wort back to the distillery.
  • Day 3,4: Fermentation (no activities)
  • Day 5: Distillation #1 (about 10 hours)
  • Day 6: Distillation #2, barreling, racking (about 6 hours)
  • Day 7: Return travel
